Posset, ancient remedy for modern times



Posset (also historically spelled poshote, poshotte) is an ancient beverage made from milk curdled with wine or ale, often spiced, and was commonly used in the Middle Ages as a remedy for colds or to aid sleep. The exact origin of the drink is unknown, but recipes for Posset began appearing in the 15th century. The earliest reference is in the 1460 ‘Boke of Nurture,’ where it is referred to as possate. It's important to note that the printing press was invented in 1440, and recipe books were rare before this invention. Therefore, Posset might be a much older drink that was passed down through generations in handwritten or oral form.

 

Rosemary has long been used as a memory aid. It has a tonic effect on the nervous system and is good for circulation. It strengthens the heart and reduces high blood pressure.

 

This recipe is dairy and gluten free but if you prefer, use milk (always use the unpasteurized, raw whole fat organic version - a lot to remember, right?) and normal beer (organic as well, in case you wondered).

 

Posset Recipe

 

Ingredients

 

1 cup non dairy milk

1 cup gluten free beer

1 tbsp chestnut flour

a pinch of salt and some rosemary leaves

1 tbsp honey

1 tsp cinnamon, pinch of nutmeg

 

Directions

 

1. Heat the milk with rosemary, chestnut flour, salt and spices until boiling.

2. Set aside and add beer and honey. Discard rosemary leaves and enjoy!


If you choose to include egg yolk, avoid boiling the milk. Instead, warm the milk and gently stir in one egg yolk. After it's fully mixed, add a generous amount of honey for sweetness and finish with some grated nutmeg.
